4 cups chopped Cauliflower, cut into bits
1 can of chickpeas, drained and rinsed
2 tablespoons extra virgin olive oil
1 pack of taco seasoning
8 corn tortillas
2 avocados, sliced to bits
Cilantro (optional)
Coconut yogurt
Heat a pan and 2 tablespoons of extra virgin olive oil.
Sautee garlic and onion
Add 4 cups of chopped cauliflower and 1 can of drained chickpeas
Mix in with some taco spice of your choice
Salt and Pepper to taste
Once Cauliflower and chickpeas are golden, put off the fire and set aside
Assemble your taco with your Corn Tortillas, Coconut Yogurt, Avocado slices and cilantro (optional)
