1 can black beans, drained and rinsed
2 Tbsp avocado oil
1 cup Vegan Cheddar Cheese
1 medium red, orange, and/ or yellow bell pepper, finely diced
8 corn tortillas
1/2 Tsp ground cumin
1 Tsp chili powder blend
3 Tbsp finely chopped pickled jalapeƱos
Heat a pan and 2 tablespoons of extra virgin olive oil.
Sautee garlic and onion
Add 4 cups of chopped cauliflower and 1 can of drained chickpeas
Mix in with some taco spice of your choice
Salt and Pepper to taste
Stir the bean and vegetable mixture after adding the smaller amount of cheese. Set aside.
Using a cast iron or Using a nonstick skillet set to medium heat, add a tortilla to the pan and heat for 1 minute.
Spread about 2 tbsp of the filling over the half of the tortilla and fold. Repeat this with the remaining tortillas
